Gardening questions for veggies?

this is my first veggie garden- i know when to pluck the things that are grown above grown, but i've also planted purple potatoes, yukon golds, carrots, shallots, and garlic. i have a couple of questions, first how do i know when to pull all these things. and second, when i do harvest my garlic, how do i store it? thanks in advance!!
